Rockburn Seven Barrels Dick Bunton Vineyard Gibbston Pinot Noir. Every year Rockburn fill hundreds of French Oak barrels with Pinot Noir, and every year they search for those individual barrels that most eloquently speak of site and season. This wine exemplifies the sophistication of Gibbston Valley Pinot Noir. In the glass the colour is an opalescent light garnet and when taken to the nose you are rewarded with a wonderful aroma of spice and florals with a lovely nuance of oak. Restrained strawberry and raspberry flavours are suspended on a fabulous acid structure and very fine tannins complement the taste experience. This a beautifully structured, balanced wine. The finish is long and lingering. Overall, the wine is delicate but yet powerful, somewhat reminiscent of wines from the spiritual home of Pinot Noir.

Louis Roederer Collection is the non-vintage of the 21st century. The innovative creation of the Perpetual Reserve (a blend of non-malolactic 50% chardonnay and 50% pinot noir set aside and blended in closed stainless-steel vats every year since 2012) coupled with the influence of Roederer's sustainable organic and biodynamic farming; and the use of an extensive palette of oak-aged Reserve wines in the cuvee; all combine to bring a never-seen before dimension in the multi-vintage champagne world. Each Collection is numbered and represents the number of blends created by the House since its foundation in 1776.

With each vintage, varietal batches are selected for Grandfather. These batches are individually aged in seasoned old oak casks before being blended together at 14 years of age. This blend is then introduced into the 'Grandfather Solera'. This Solera consists of six stages that are designed to fully integrate all components offering consistency and freshness with a final minimum average blended age of 20 years. Deep amber/mahogany in colour with green-gold tinges, this is a blend of the finest old tawnies. The palate shows classical Penfolds fruitcake, liquorice and vanillin oak flavours with a sweet full and round mid-palate, and a finish that persists on and on.
